GREASE MANAGEMENT – ARE YOU DOING IT RIGHT?

All businesses no matter the size must have a grease trap in place if they are preparing and serving hot food from a kitchen facility.

If there is no grease trap or grease management system in place in your premises then this can leave your business uncompliant. That is a situation no one wants to be left in. You will be at risk of contravening the Water Industry Act 1991 if your business allows fats, oils and grease to enter the drainage system. Also if these are left unmaintained they pose a risk of unwanted blockages forming, and there is also a high risk of hygiene issues occurring within the kitchen area.

Fats, oils and grease or FOG as they are more commonly referred to, can cause devastating damage to drainage systems, and blockages are just the beginning. If you have never seen the results of this, then you may not have seen a fatberg. These are large solid masses of waste product which form inside pipes and sewers, they can be enormous but they are preventable!

Preventing these from occurring is quite simple in two ways.

Firstly, having a sufficient grease trap installed within commercial kitchens, or food preparation premises. This will need to be sized according to the volume of food / grease produced. Your drainage professionals can advise you of this.

Secondly, maintenance of the grease trap! They don’t look after themselves you know…..

You may already have a grease trap in situ at your facility and you may not have had it emptied before – this is something that should be looked at immediately. If the grease trap is newly fitted, then work with your drainage company to schedule the future routine servicing.
